Food for Friday

If you’re as heavily into the food-ing season as we are, you’re probably looking for an easy and delicious dish to throw together for your next pitch-in or brunch or after-party meal.  Here’s a quick make-ahead chicken chili that is really scrumptious – it is an award-winning dish, even, having won a Super Bowl Cook-Off in the not-too-distant past.

White Chicken Chili

1 large jar of Great Northern Beans (don’t drain)
1 jar of salsa
1 block of Monterey Jack cheese, cubed
1 block of Pepper Jack cheese, cubed
1 or 2 cans of chicken breast meat
1 or 2 small cans of chicken broth

Combine all ingredients in a pot and heat thoroughly.  This tastes best when cooked, refrigerated overnight, and reheated.  No kidding!

A super-easy chili that’s best when you make it ahead of time.  Serve with some jalapeno cornbread and a mixed greens salad, and you’ll wow and satisfy your guests with very little effort on your part.  Now that’s a holiday!
